5 TikTok-receptjes voor studenten die door ‘De Mol’ ook zin hebben in Thais

We moeten toegeven dat we door elke zondagavond oplettend naar ‘De Mol’ te kijken, ook verlangen naar een zonnig tripje richting Thailand. Jammer genoeg hebben veel studenten daar nu allesbehalve tijd voor. Daarom verzamelden wij deze week enkele overheerlijke Thaise gerechtjes die we vonden op TikTok en die je zelfs op kot in zomerse sferen brengen, mai pen rai kha!

Maandag: noedelsoep met scampi en Thaise rode curry

@georgiamaysalamat Thai Red Noodle Prawn Soup This is one of those meals that you make for the first time, and then suddenly it becomes a weekly meal. Its SO easy, so delicious most most importantly It’s super versatile. You can use any protein – salmon or chicken work well, you can also use different veggies too depending what you have in the fridge. Ingredients Serves 2 – 150g raw prawns – 2 cloves garlic – 20g ginger – 3 tbsp red Thai curry paste – 350ml chicken stock – 1 tin coconut milk – 100g egg noodles – 1 carrot, julienne – 4 stems of tender stem broccoli – 2 tsp fish sauce – 2 tsp soy sauce – 1 tbsp honey – 1 tbsp almond butter – 1/2 lime Garnish – Bok Choy – Extra carrot, julienne – Sesame seeds – Fresh red chilli – Spring onion – Chilli oil (the @tonkotsu.ramenbar or @leekumkeede ) – Coriander – Extra lime Finely diced the garlic and ginger, sauté in a pan with a little bit of oil for a couple of minutes. Add the curry paste and cook for a further minute. At the stock and coconut milk and bring to the boil. Reduce the heat immediately and bring to a gentle simmer. Julienne the carrot and slice the broccoli into thin strips. Now add the noodles, prawns, broccoli and carrot and broccoli to the pot and simmer for around 5 minutes until the prawns and noodles are fully cooked. Add the soy, fish sauce, almond butter and squeeze of lime and mix through. Vrijdag: Thaise gehaktballetjes met kokosroom

@emthenutritionist CREAMY THAI COCONUT CHICKEN MEATBALLS The perfect midweek meal is aromatic Thai chicken meatballs with ginger, garlic, and chilli cooked in a rich coconut sauce. Serve with fluffy rice. Freezer friendly too. You will need to serve 4 271kcal and 28g protein per serving not inc rice 500g lean chicken mince 1 small grated courgette 1/2 red chilli diced 1 heaped tsp ginger and garlic paste 2 tbsp chopped fresh coriander 2 spring onions, finely chopped 1 medium egg 2 tbsp light soy sauce Zest of 1 lime Salt and pepper for the sauce 2 tbsp Thai red curry paste 1 tin coconut milk (light or full fat) 1 spring onion, diced 1 tsp ginger and garlic paste 1 red pepper, thinly sliced 1/2 chicken stock cube 1 tbsp soy sauce 1 tsp honey Juice of 1/2 lime Rice and broccoli to serve. Grate the courgette. In a mixing bowl, add all the meatball ingredients together. Mix gently to combine. The mix may feel wet, thats normal. Pop a frying pan on over medium heat and add a little oil. Using two spoons, shape a small golf ball size meatballs, place into the frying pan and cook in batches until browned all over but dont need to be cooked through, set aside and repeat until all the meatballs are browned. Wipe clean the pan to remove any burnt bits. In the same pan, add the Thai curry paste, spring onion, cook for a minute to release the aromats and add a tin of coconut milk. Add 1 tsp ginger garlic paste, honey, soy sauce, stock cube and sliced red pepper. Bring to a gentle simmer, let reduce for 5 minutes, then add in the par-cooked meatballs and simmer for 10 minutes or until the meatballs are cooked through. Finish the coconut sauce with a squeeze of fresh lime and a scattering of fresh coriander. Taste and season if needed. Serve the meatballs with fluffy rice and broccoli. #healthyrecipes #mealprep #dinnerideas ♬ original sound – Emily English
