Ingredients FOR THE DOUGH: 1 cup whole milk 1/2 cup (1 stick) unsalted butter 1/2 cup + 1 Tablespoon sugar, divided 1 (3/4-oz.) package active dry yeast 4 cups all-purpose flour, plus more for rolling out dough 3 Tablespoons unsweetened cocoa powder 1 teaspoon kosher salt 2 large eggs, at room temperature 2 tablespoons red velvet bakery emulsion Cooking spray FOR THE FILLING: 1/2 cup (1 stick) unsalted butter 1/2 cup packed light brown sugar 1/4 cup sugar 1 Tablespoon ground cinnamon ¼ teaspoon black food coloring Cream Cheese Frosting 8 Ounces Cream Cheese, softened 1 Cup Butter, softened 1 Tablespoon Vanilla Extract 4 Cups Powdered Sugar CINNAMON ROLL BUTTERMILK SYRUP 1/2 cup butter 3/4 cup sugar 1/4 cup brown sugar 1 cup buttermilk 1 Tbsp. corn syrup 1/2 tsp. cinnamon 2 teaspoons vanilla extract 1 teaspoon red velvet bakery emulsion 1/2 tsp. baking soda MAKE THE DOUGH: In a small sauce pot set over low heat, combine the milk and butter and cook until the butter has melted and the mixture is warmed to just below 110°F. Stir in 1 tablespoon sugar and the yeast then set the mixture aside for 5 minutes. In a stand mixer fitted with the dough hook attachment, combine the flour, cocoa powder, salt and remaining ½ cup sugar. Add the yeast mixture and eggs with bakery emulsion to the stand mixer and beat for 2 minutes. Add red food coloring until the dough reaches your desired color then continue beating for 6 minutes until the dough is combined. (It will be tacky. If it’s too tacky, or you’re in a humid environment, add 1 tablespoon of flour at a time until the mixture reaches a smooth consistency.) Grease a large bowl with cooking spray. Transfer the dough into the bowl and cover it with plastic wrap. Store the dough in a warm, dark place until it doubles in size, about 2 hours. Grease a 13×9-inch baking pan with cooking spray. Lightly flour your work surface then roll the dough into a rectangle that’s 1/4-inch thick and measures about 12×18 inches. MAKE THE FILLING: In a medium bowl, cream together the butter, brown sugar, sugar, cinnamon and black food coloring. Sprinkle the cinnamon-sugar mixture evenly atop the butter. Beginning at the long end, tightly roll the dough up into a log. Slice off the ends then slice the log into 12 rolls. Arrange the rolls in the greased baking dish then cover them with plastic wrap. Set the rolls aside in a warm, dark place until they double in size, about 30 minutes. Preheat the oven to 350°F. Uncover the rolls and bake them for 18 to 22 minutes or until they are no longer doughy. Set the rolls aside to cool. MAKE THE FROSTING: Place the softened butter in the bowl of a stand mixer and beat for 1 minute. Add the softened cream cheese and beat with the butter for another 2 minutes. Measure 2 cups of powdered sugar and add the the bowl along with the vanilla extract. Cover and mix for 1 minute. Add the remaining powdered sugar and whip the frosting for 2-3 minutes, until it is light and fluffy. Make the syrup Add butter, sugar, brown sugar, buttermilk, corn syrup and cinnamon to a medium sauce pan and bring to a boil over medium/high heat. Let boil for 1 minute. Stir occasionally. Whisk in vanilla, emulsion and baking soda and let cook for 10 more seconds. The syrup will foam when you add the baking soda. Cinnamon rolls met speculoospasta

@audreybakes Biscoff Cinnamon Rolls 🤎 (makes ~8 rolls) Dough: ¾ cup (180g) warm milk 1 packet instant yeast (2¼ tsp/7g) *if using active dry yeast, gently stir it in with the warm milk and sugar then let sit 5-10 min until foamy) ¼ cup (50g) granulated sugar 1 egg + 1 egg yolk, room temp ¼ cup (57g) unsalted butter, melted 3-3½ cups (360-420g) all purpose flour (start with 3 cups and only add more if it’s super sticky) ¾ tsp salt optional: ⅓-½ cup warm heavy cream to pour over the rolls before baking Biscoff cinnamon filling: ⅓ cup (76g) unsalted butter, softened ⅓ cup (~80g) Biscoff spread/cookie butter ¾ cup (165g) brown sugar, packed 1½ tbsp cinnamon + crushed Biscoff cookies Cream cheese icing: 6oz (170g) cream cheese, room temp (block style, not spreadable) ¼ cup (57g) unsalted butter, room temp ⅓ cup (~80g) biscoff spread 1 cup (120g) powdered sugar ½ tsp vanilla Instructions: Combine the warm milk and instant yeast. Add sugar, eggs, and melted butter, mix. Stir in salt and flour. Mix until a soft dough forms. Knead the dough for 8-10 min. Place in a lightly greased bowl, cover, and let rise for 1-1½ hrs or until doubled. For the biscoff cinnamon filling, mix the soft butter, biscoff spread, brown sugar, and cinnamon until combined and spreadable. Roll dough into about a 9x14in rectangle. Spread biscoff cinnamon filling evenly and scatter the crushed biscoff cookies on top of it. I like to use a pizza cutter or knife to first slice 8 pieces then roll them each up tightly. (Or you can tightly roll the whole thing then slice) Place in greased 9×13 pan (it could also probably fit tightly in a 9×9). Cover and let rise 35-45 min. Pour warm heavy cream over the rolls right before baking. Bake at 350°F for 22-28 min until golden. (tent with foil towards the end if the tops are browning too quickly) To make the icing, beat cream cheese, butter, and biscoff spread together until smooth. Then, beat in powdered sugar and vanilla until fully combined. Spread over warm rolls and sprinkle extra crushed biscoff cookies over the top. Full recipe below. Dough: * 1 cup warm milk * 2 1/4 tsp active dry yeast, standard package * 3 tbsp brown sugar * 6 tbsp unsalted butter, softened * 3 large eggs * 4 cups flour, separated Apple Filling * 1/2 cup brown sugar * 1/2 cup granulated sugar * 2 tbsp apple pie spice * 4 tbsp unsalted butter, softened * 2 red apples, diced Frosting: * 1 jar of cream cheese frosting * 1 tbsp cinnamon * 2 tbsp caramel sauce, plus extra to drizzle Instructions: 1. Warm milk to 110°F. Add yeast and brown sugar and let sit for 10 minutes. Mixture will be foamy. 2. Add in butter, eggs, and 1 cup of flour. Mix on low speed and slow add remaining flour one cup at a time to mixture till fully incorporated. Mix for about 6 minutes on medium speed till ball forms. 3. Put dough in a greased bowl. Place towel over bowl and put in a warm place for 90 minutes. 4. While dough is rising combine sugars and apple pie spice. Set aside. Dice up apples and set aside. 5. Once dough has doubled in size, punch down. Roll dough out on a floured surface into a rectangular shape. Spread softened butter leaving a rim around the dough. Sprinkle sugar mixture and evenly spread diced apples. Roll dough tightly together into a log shape. Cut 8 large rolls with a sharp knife and place rolls in a greased 9×13 baking dish. Cover with a towel and let them rise for another 30-45 minutes till double in size. 6. Bake at 350° F for 25 minutes till golden brown. 7. While baking make frosting by combining cream cheese frosting, cinnamon and caramel together in a small bowl. They’re simple to make, full of cinnamon sugar swirls, and the perfect recipe to save for a cozy fall weekend. Recipe below👇🏻 For the Dough • ¾ cup warm whole milk (110°F) • 2 ¼ tsp (1 packet) instant yeast • ⅓ cup granulated sugar • 1 large egg, room temp • ½ cup pumpkin purée (not pie filling) • ¼ cup unsalted butter, melted & cooled • 3 ½ cups all-purpose flour • 1 ½ tsp pumpkin pie spice • 1 tsp cinnamon • 1 tsp kosher salt For the Filling • 6 Tbsp unsalted butter, softened • ½ cup light brown sugar, packed • 1 Tbsp cinnamon • ½ tsp pumpkin pie spice For the Frosting • 4 oz cream cheese, softened • 1 cup powdered sugar, sifted • 2–3 Tbsp milk or cream • ½ tsp vanilla extract Directions 1. Grease and line a 8 inch square pan with parchment paper. – Add sugar to hot butter and whisk to combine, let cool slightly. – Add egg, egg yolk and vanilla and whisk until smooth. – Fold in flour, baking powder and cinnamon until combined. – Pour batter into prepared pan. – Combine all the cinnamon swirl ingredients in a bowl and spoon the mixture on top of the blondie batter (I used about just over half of the mixture). Using a wooden skewer, swirl the mixture all over the blondie batter. – Bake for 30 – 35 minutes, until lightly golden. – Set aside and allow to cool fully. – While the blondie cools, beat the cream cheese and butter with an electric handheld beater until smooth. – Add powdered sugar, vanilla and heavy cream then beat again until fully combined. – Evenly spread the icing all over the blondie. Whisk the warm milk, active yeast, butter, eggs, and sugar until combined. 2. Add in the salt and bread, mix until just combined. Knead the dough for about 5-8 minutes or until the dough bounces back when pressed on. 3. Place the dough in an oiled bowl and cover with plastic wrap or a towel. Let rise for 1.5-2 hours. Ingredients for the filling: • 1/4 cup softened butter • 2/3 cup brown sugar • 1 1/2 tbsps cinnamon • 1/2 cup diced strawberries Directions: 1. Once the dough is done rising, punch the dough to release all of the air. Then place it on a well floured surface. 2. Roll out the dough into a square or rectangle shape. Spread the softened butter all over the dough. 3. Mix the cinnamon and brown sugar. Sprinkle all over the butter and then press dough to compact it. 4. Sprinkle the strawberries all over the dough. 5. Starting with the smaller side, tightly roll the dough all the way to the other end until it’s in a log shape. Then using a bread knife or floss, cut the dough into 12 rolls, placing them cut side down in an oiled 9×13 pan. 6. Cover the rolls with plastic wrap or a towel and let rise for 45 minutes. 7. Bake at 350 degrees for about 20 minutes or until golden brown. Let cool slightly. Ingredients for the Strawberry Cream Cheese Frosting: • 4oz cream cheese (softened) • 3 tbsps butter (softened) • 3/4 cup powdered sugar • 1 tsp vanilla extract • 1 tbsp strawberry syrup (optional) • 1/4 cup diced strawberries Directions: 1. Beat the cream cheese and butter. Then add in the vanilla, powdered sugar, and strawberry syrup beating until combined. Lastly stir in the strawberries. 2. Spread the icing onto the slightly warm rolls.
